Hot Chocolate Cookies
- 3/4 cup butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2-1/4 cups all-purpose flour
- 1/2 cup instant hot cocoa mix (about 3 packets)
- 3 tablespoons baking cocoa
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup vanilla marshmallow bits (not miniature marshmallows)
- 1 cup semisweet chocolate chips
Directions: Preheat the oven to 375°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, cocoa mix, baking cocoa, salt, baking soda and baking powder; gradually beat into creamed mixture. Gently stir in marshmallow bits and chocolate chips.
Apple Crepes
Crepe Recipe:
1 ¾ cups of whole milk
⅓ cups of water
3 large eggs
3 Tbsp granulated sugar
1 ½ + 2 Tbsp of all purpose flour
1 Tbs of Vanilla
½ Tsp kosher salt
3 Tbsp of unsalted butter, melted
Apple Crepe Filling:
5 apples, peeled and sliced
½ cup of granulated sugar
2 tsp of cinnamon
4 Tbsp of unsalted butter
A pinch of salt!
Directions: peel, core and slice the apples. Cook the apples with some butter, sugar and cinnamon and blend together the crepe batter ingredients. Pour a little at a time on a crepe pan, swirl or spread with a spatula to make a thin layer. Once the top surface is dry and the edges are starting to brown, flip it over. After a short cook on the other side, flip back, add a little of the apple filling, roll it up and serve!
