Quick and Easy Mousse!

This simple not to sweet Mousse is easy to make and super delicious! The best part, Mr. Bailey approves!!!


12 ounces bittersweet chocolate

1 cup sugar

4 tablespoons water

1/2 cup unsweetened cocoa

1 teaspoon vanilla extract

2 packages (32 ounces) of silken tofu

whipped cream or raspberries (optional)


1. Combine first four ingredients in a small saucepan; cook over medium heat until mixture is smooth and creamy. Stir frequently.

2. Add cocoa and vanilla; stir until blended.

3. Place mixture and tofu in a blender or blend with a immersion blender; process until blended. Pour mixture into each of 8 ramekins or custard cups. Cover and chill for at least 2 hours.

4. Top each serving with topping of your choice and enjoy!!

Mousse serves 8.
